Oreo Cookie Cheesecake

Crust
 1 ¼ cups Graham Cracker crumbs
  cup Unsalted Butter
 ¼ cup Firmly Packed Light Brown Sugar
 1 tbsp Cinnamon
Filling
 2 lbs Cream Cheese (room temperature)
 1 ¼ cups Sugar
 2 tbsp Flour
 4 XL Eggs
 2 XL Yolks
  cup Whipping Cream
 1 tsp Vanilla
 1 ½ cups Crushed Oreo Cookies
Sour Cream Topping
 2 cups Sour Cream
 1 ¼ cups Sugar
 1 tsp Vanilla
Chocolate Glaze
 1 cup Whipping Cream
 8 oz Semi-Sweet Chocolate Chips
 1 tsp Vanilla

Blend. Press into the bottom of a springform pan and refrigerate until firm (about 30 minutes)

Filling

Cream the cheese until there are no lumps. Then add sugar and flour and blend. Beat in eggs. Stir in whipping cream and vanilla.

Pour half of this filling into the springform pan. Then gently crushed Oreos. Then gently add the rest of the filling.

Bake at 425° for 15 minutes. Turn temperature down to 225° and bake for another 50 minutes.

Topping

Blend sour cream, sugar and vanilla

Remove cake from oven and top with Topping (sour cream) mixture. Return to oven and bake for another 15 minutes at 225°

Chill overnight

Chocolate Glaze

Scald the cream. Then add the chocolate chips and vanilla and stir until melted.

Refrigerate glaze 10 minutes, then pour over cake.

Use leftover Oreos to decorate cake.
