Crust
  1. 2 cups flour
  2. 1 tsp salt
  3. ⅔ cup shortening
  4. 6-7 Tablespoons cold water
Blueberry Mixture
  1. 1 cup sugar
  2. ¼ cup all purpose flour
  3. ½ teaspoon finely grated lemon peel
  4. dash salt
  5. 5 to 6 cups blueberries
  6. 2 teaspoons lemon juice
Assembled Pie
  1. 1 Tablespoon butter, cut into 1/4 cubes
Crust
  1. Stir together the salt and flour. Cut in shortening with a knife until cut into small pieces (the size of small peas). Sprinkle one tablespoon of the water into the mixture and cut in with a knife. Push dough to one side, then separate back out. Add one tablespoon at a time until the dough sticks together. Cut in half and form two balls. Refrigerate until read to roll out.
Blueberry Mixture
  1. Mix the sugar, flour, salt and lemon peel. Add blueberries.
Assembled Pie
  1. Roll dough out to 12" in diameter. Place one flattened dough crust onto pie pan. Pour blueberry mixture into pie crust. Add cubed butter. Top with remaining crust. Cover edges of pie with aluminum foil. Bake in a 375° oven for 20 minutes. Remove foil and bake for another 20 minutes or until crust is golden brown.
Notes
  1. For lattice top, cut flattened dough crust into 1 inch strips and weave onto pie. Bake as usual.
