Better than Dessert Salad

I was on my way to a Memorial Day picnic and started throwing things together and lo and behold: the best salad I have ever created! Here it is.

Dressing
  1. ¼ cup red wine vinegar
  2. 1 Tablespoon Dijon mustard
  3. Salt and Pepper
  4. ¾ cup olive oil
  5. 2 Tablespoons green onions (or shallots)
  6. 1 teaspoon minced garlic
  7. 1 teaspoon sugar or sugar substitute
Salad
  1. Butter Lettuce
  2. Red, Orange and Yellow Bell Peppers, sliced
  3. Broccoli, cut into ½" pieces
  4. Carrots, sliced
  5. Green beans
  6. Red onion, sliced thin
  7. Craisins
  8. Black pitted olives
  9. Mango or other fruit in season
  10. Pistachio Squares by 180° Snacks, crunched up
  11. Pecans or other nuts, chopped
  12. Sunflower & Pumpkin seeds
Dressing
  1. Whisk together vinegar, mustard, salt, and pepper. Add oil in a slow stream while whisking to emulsify. Add the green onions or shallots and garlic. Mix dressing into the salad until well covered and serve the remaining dressing on the side.
Salad
  1. Add vegetables, nuts, and seeds in proportion to your taste.
Notes
  1. One of the secrets of a great salad is the temperature. It tastes better when it's cold and crisp and when the dressing's already blended into the ingredients.
